What it is
Thai fried rice is day-old jasmine rice stir-fried with egg, garlic, onion and a choice of protein, seasoned lightly with fish sauce and soy, and served with a wedge of lime, cucumber and chilli fish sauce (prik nam pla) on the side.
How it tastes
Clean, savoury and smoky from the wok, less oily and less sweet than Chinese fried rice, brightened by the squeeze of lime and the salty-spicy hit of prik nam pla.
Where it comes from
A Thai adaptation of Chinese fried rice, using fragrant jasmine rice and Thai seasonings; an everyday meal across the country.

- Chicken, prawn, pork or crab
- Fish sauce

How it's made
